Caroline Manzo born Caroline Laurita is an American television personality, author, and entrepreneur. Manzo is best known for starring in the reality television series The Real Housewives of New Jersey. She also in her own spin-off show, Manzo’d with Children.
Although Manzo spends most of her time with her family, she is also the owner of two successful businesses, Opus Properties which is a real estate firm and 4 My Mom, a children’s accessories line.
She also serves on the board of her sister, Dina’s foundation, Project Ladybug. She is also affiliated with The Carolyn Gable Expect A Miracle Foundation, which helps single mothers.

Caroline Manzo Recipes
Escarole and Beans Soup
- 2 large heads escarole
- 6 cloves garlic, smashed
- 4 TBS. extra virgin olive oil
- 3/4lb hot & sweet Italian sausage links, casing removed
- 2 15oz cans chicken broth, I use College-Inn
- 1 19 oz can cannellini beans, I use Progresso
- crushed red pepper flakes
- kosher salt
- Parmigiano-Reggiano cheese
Rinse escarole several times in strainer to be sure all sand is out, drain and chop escarole into 1 to 2 inch pieces.
Heat oil in medium size sauce pan, add garlic, and sauté until garlic turns a light golden brown, this should take about 1 minute
Take sausage out of casing & cut into 1 inch pieces add to garlic & oil and cook over medium heat until sausage is lightly browned (should only take about 5 minutes)
Add the escarole to the pot, toss it around with the sausage & oil so the escarole absorbs the heat and starts to wilt, use tongs, it makes life a lot easier
Cover the pot for a minute or two so the escarole shrinks down, we need room for the beans and broth
Add the two cans of chicken broth along with the cannellini beans into the pot cover and let simmer for about 5 minutes
Add crushed red pepper flakes to your liking, I also put a rind from fresh parmigiano-regiano cheese to kick it up a bit, you only need about a 1 inch chunk – add salt as desired
Cover and simmer for about twenty minutes, allowing all ingredients to blend together.
Ladle into bowls and serve topped with parmigiano cheese and don’t forget the crusty Italian Bread for dipping!

Caroline Manzo Remembers Cooking for Her TV Crew on Christmas: “I Felt Terrible… I Made Sure They Had Dinner”

Lucky were the film crews who got to work with Manzo. While appearing on the Kitchen Chat podcast, The Real Housewives of New Jersey and Manzo’d With Children alum remembered the deliciously Italian way she’d take care of her film crew.
When talking about fame with her brother, chef Jaime Laurita, Caroline said: “It’s not all it’s cut out to be. I didn’t really enjoy it, because I never understood it… I never understood what the big deal was. And I think the network, always with me, was like that one… Because I go on national television and say listen, I don’t know what the big deal is.”
Caroline added that she refused to act like anyone different from who she truly is. “I remember filming many years ago, on Christmas Eve, they filmed, and I was heartbroken for the crew. Because it’s Christmas. What are you doing in my house on Christmas? You shouldn’t be at my house on Christmas. So, Christmas dinner is always a big thing, and I came down how I’m usually dressed on Christmas, it’s like a bum, because I’m using my shirt as a cloth. So I’m cooking and I’m using my shirt as an apron. So I’m not going to come down in heels and say OK, I’m going to cook for 30 people now! That’s not how you cook for 30 people.”
She added: “I also cooked the identical meal and set in on a table in the dining room that wasn’t being filmed, for the entire crew. And I also gave each of the crew members a gift. Because I felt terrible that [my job] took Christmas away from these people. It just killed me. And I made sure that they had dinner and they had gifts.”
What’d she get them? “You don’t know the likes and dislikes of the sound guy or the guy that’s getting you coffee each day, so… I made each of them a box of chocolates, and I got them each a scarf, a pair of gloves, and a hat… You gotta keep it real.”
